This weekend I found I had time to experiment with some paleo recipes I have been developing. Several of them still need some work but here’s one that’s ready:
5-6 ripe medium-sized peaches, peeled
1-1.5 Cups blueberries
1.5 cups almond flour
honey, to taste
cinnamon, to taste
1. Preheat oven to 350F. Slice the peaches thinly and layer into the bottom of a 9X9 baking dish. Sprinkle the blueberries on top. Drizzle about 2-3 Tbsp of honey over the fruit in the baking dish.
2. In a bowl, mix the almond flour, egg, honey and cinnamon until it forms a sticky dough.
3. Drop spoonfuls of the dough onto the top of the peaches and blueberries and spread out.
4. Bake 15-20 minutes until topping is crisp and lightly browned.
Hint: The topping will not be very sweet unless you add something sweet to it, but it is easy to go overboard on sweetness with honey. Use more cinnamon and slowly add in the honey until its to your liking. I would estimate that you need 3-5 Tbsp of honey in the topping.
