Spicy Shrimp Soup

  • Olive oil, 1/4 cup
  • Shrimp (1/2 to 1 lb)
  • Lime Juice (enough to drizzle over shrimp)
  • 2 cloves (or 2 tsp) minced Garlic
  • 1/4 tsp ground cayenne pepper
  • 1/4 tsp chili powder
  • 2 stalks green onion, diced
  • sea salt, about 1/2 tsp
  • 1 tomato, diced or cut up in larger chunks if you prefer
  • 2 celery stalk, sliced
  • 2-3 tsp fresh cilantro (dried cilantro will work too if you don’t have fresh)
1). Sautee the shrimp with spices, lime juice, garlic, salt and onions for about 6 min (3 min each side).
2). Add vegetables and turn heat down to low or med-low for 10 more minutes and let the juices run out and mix. This will make a soupy base of the spices and flavors.
3). Pour into a bowl and enjoy!
***In previous versions of this recipe, I incorrectly wrote that 1/4 tsp of ground red pepper was to be used, and that should have been 1/4 tsp chili powder. I apologize for the mistake!
