Veggie Salad with oil/lemon vinaigrette

Do you want a nice paleo salad that’s more than just some lettuce and toppings? Need something to impress friends and family when entertaining but want something super simple to prepare? Look no further:

Fresh ripe tomato(es)

Fresh cucumber

Fresh celery

Fresh parsley or basil (optional)

olive oil, about 1/3 cup

lemon juice, about 1-2 Tbsp

1. Chop the veggies into 1/4″ cubes or similar size. Mix together in a big bowl.

2. In a separate bowl or jar, mix the oil and lemon juice until uniform.

3. Drizzle the dressing over the salad and serve or chill.

Optional ingredients:

Want to make this a lunch or light dinner meal with some protein? Steam some shrimp and add to the salad or add some pecans or walnuts for a crunchy protein.
